250g strawberries, washed, hulled, chopped
220g (1 cup) caster sugar
1/4 cup fresh basil leaves, torn
250ml (1 cup) apple cider vinegar

Step 1Combine strawberries
(250g strawberries, washed, hulled, chopped), sugar
(220g (1 cup) caster sugar) and basil
(1/4 cup fresh basil leaves, torn) in a glass or ceramic bowl. Cover and set aside at room temperature, stirring occasionally, for 24 hours.
Step 2Strain the strawberry mixture then stir in the vinegar
(250ml (1 cup) apple cider vinegar). Transfer to a sterilised glass bottle and store in the fridge for up to 2 weeks.
Step 3Serve 1-2 tbsp in soda water with strawberries and basil.
Don’t chuck the strained berries and basil! Puree and use as a dessert sauce. It freezes well too.
