Strawberry & basil shrub

Looking for strawberry recipes to use up extra fruit? Make this sweet syrup, it lasts for weeks and is so delicious mixed into cocktails or soda.


4 Ingredients


  • 250g strawberries, washed, hulled, chopped

  • 220g (1 cup) caster sugar

  • 1/4 cup fresh basil leaves, torn

  • 250ml (1 cup) apple cider vinegar

3 Method Steps


  • Step 1

    Combine strawberries
    (250g strawberries, washed, hulled, chopped)
    , sugar
    (220g (1 cup) caster sugar)
    and basil
    (1/4 cup fresh basil leaves, torn)
    in a glass or ceramic bowl. Cover and set aside at room temperature, stirring occasionally, for 24 hours.

  • Step 2

    Strain the strawberry mixture then stir in the vinegar
    (250ml (1 cup) apple cider vinegar)
    . Transfer to a sterilised glass bottle and store in the fridge for up to 2 weeks.

  • Step 3

    Serve 1-2 tbsp in soda water with strawberries and basil.

Recipe Notes

Don’t chuck the strained berries and basil! Puree and use as a dessert sauce. It freezes well too.
