Strawberries and cream Oreo cupcakes

Whip up a batch of these moist strawberry cupcakes with everyone’s favourite biscuit, Oreos, on top for an instant mood-booster.

13 Ingredients

  • 190g (1 1/4 cups) self-raising flour

  • 30g (1/4 cup) cocoa powder

  • 1 tbs cornflour

  • 230g caster sugar

  • 125g butter, chopped, at room temperature

  • 2 eggs

  • 125ml (1/2 cup) milk

  • 18 Oreo Strawberry biscuits

  • Sliced fresh strawberries, to decorate
  • Strawberries & cream frosting

  • 250g pkt cream cheese, chopped, at room temperature

  • 250g butter, chopped, at room temperature

  • 2 tsp Queen Organic Vanilla Bean Paste

  • 300g (2 cups) icing sugar mixture, sifted

4 Method Steps

  • Step 1

    Preheat oven to 180°C/160°C fan forced. Line twelve 100ml muffin pans with large paper cases.

    (190g (1 1/4 cups) self-raising flour), cocoa (30g (1/4 cup) cocoa powder) and cornflour (1 tbs cornflour) into a large bowl. Add sugar (230g caster sugar), butter (125g butter, chopped, at room temperature), eggs (2 eggs) and milk (125ml (1/2 cup) milk). Use electric beaters to beat for 4-5 minutes or until mixture is smooth and well combined. Place a heaped teaspoonful of mixture into each patty case. Place 1 Oreo on top into each case. Divide remaining mixture among prepared pans. Smooth surface. Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Transfer to a wire rack to cool completely.

  • Step 3

    Meanwhile, to make the frosting, use electric beaters to beat the cream cheese (250g pkt cream cheese, chopped, at room temperature), butter (250g butter, chopped, at room temperature) and vanilla (2 tsp Queen Organic Vanilla Bean Paste) in a large bowl until pale and creamy. Add the icing sugar (300g (2 cups) icing sugar mixture, sifted) in batches, beating well after each addition, until well combined. Spoon into a piping bag fitted with a 1.5cm star nozzle.

  • Step 4

    Pipe frosting on cupcakes. Cut remaining Oreos (18 Oreo Strawberry biscuits) in half. Decorate cupcakes with Oreo halves and fresh strawberry (Sliced fresh strawberries, to decorate).
