Sticky date banana bread and butter pudding

Combining two delicious desserts, banana bread and sticky date pudding. This sweet treat is a winter winner!

9 Ingredients


  • 1 cup pitted dried dates, chopped

  • 3/4 tsp bicarbonate of soda

  • 550g packet banana bread, cut into 1cm-thick slices

  • 4 eggs

  • 1 cup milk

  • 1 cup thickened cream

  • Icing sugar, for dusting

  • Caramel sauce, to serve

  • Double cream, to serve

3 Method Steps


  • Step 1

    Preheat oven to 180C/160C fan-forced.

  • Step 2

    Place dates and 1 cup water in a medium saucepan over medium-high heat. Bring to the boil. Remove from heat. Stir in bicarbonate of soda. Set aside for 5 minutes.

  • Step 3

    Grease a 5cm-deep, 20cm x 30cm baking dish. Arrange banana bread slices, slightly overlapping, to cover base of dish. Whisk eggs, milk and cream in a bowl. Add date mixture. Whisk to combine. Pour egg mixture over banana bread (rearrange dates if all in a clump). Bake for 30 to 35 minutes or until golden and set. Dust with icing sugar. Drizzle with caramel sauce and serve with double cream.
