Slow cooker sweet and sour pork roast

Old-school favourite sweet and sour pork gets the crockpot treatment in this super-easy dinner recipe.

19 Ingredients

  • 1 tbsp vegetable oil

  • 1 brown onion, cut into thick wedges

  • 2 carrots, halved, thickly sliced diagonally

  • 2 celery stalks, thickly sliced diagonally

  • 3cm piece fresh ginger, grated

  • 2 garlic cloves, crushed

  • 2 tbsp plain flour

  • 1/2 cup Massel Chicken Style Liquid Stock

  • 1/2 cup pineapple juice

  • 1/4 cup tomato sauce

  • 1/4 cup soy sauce

  • 2 tbsp rice wine vinegar

  • 1.2kg pork scotch roast

  • 1/4 cup brown sugar

  • 2 red capsicums, thinly sliced

  • 1 green capsicum, thinly sliced

  • 150g fresh pineapple, finely diced

  • 2 green onions, sliced diagonally

  • Steamed white long-grain rice

4 Method Steps

  • Step 1

    Heat oil in flameproof bowl of slow cooker or large frying pan over medium-high heat. Add brown onion, carrot and celery. Cook, stirring, for 5 minutes or until onion starts to soften. Add ginger and garlic. Cook for 30 seconds or until fragrant. Add flour. Cook, stirring, for 1 minute to coat vegetables.

  • Step 2

    Stir in stock, juice, sauces and vinegar. Season with salt and pepper. Transfer to slow cooker.

  • Step 3

    Rub pork all over with brown sugar. Season with salt and pepper. Place in slow cooker. Cover. Cook on HIGH for 2 hours. Turn pork. Cook for a further 1 hour. Add capsicum around pork. Cook for 1 hour or until capsicum has softened and pork is tender.

  • Step 4

    Combine pineapple and green onion in a bowl. Sprinkle over pork. Serve with steamed rice.
