Slow cooker shredded chicken

This is the ultimate meal prep chicken recipe. It’s so easy to make (you literally place everything in a slow cooker and stir!) and can be used in many ways. Try it in tacos or burritos, on sandwiches or wraps, as a pizza topping or served with rice or pasta. It’s even great with a side of veg or mixed through salad.

  • 500g chicken breast fillets

  • 200g chicken thigh fillets, fat trimmed (see notes)

  • 2 tbsp brown sugar

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp ground paprika

  • 1/4 tsp Mexican chilli powder

  • 250ml (1 cup) smoky barbecue sauce

  • 1 tbsp apple cider vinegar

  • Step 1

    Place the chicken

    (500g chicken breast fillets|200g chicken thigh fillets, fat trimmed (see notes)) in the slow cooker. Add the remaining ingredients (2 tbsp brown sugar|1 tsp garlic powder|1 tsp onion powder|1/2 tsp ground paprika|1/4 tsp Mexican chilli powder|250ml (1 cup) smoky barbecue sauce|1 tbsp apple cider vinegar) and stir until combined.


  • Step 2

    Cover and cook on Low for 6 hours, turning the chicken halfway through cooking (see notes).

  • Step 3

    Transfer chicken to a plate or board. Use 2 forks to coarsely shred the chicken. Return chicken to slow cooker and stir with the liquid until well combined.

Recipe Notes

You can make this with breast fillets alone, but the addition of 2-3 thigh fillets (to make up the total weight) adds extra flavour and moisture.

Don’t worry if you aren’t around the turn the chicken, it will still turn out delicious.
