Slow cooker roast chicken with cheat’s crispy skin


Recipe may contain gluten, peanuts, tree nuts, milk and soy.

Preparing a whole chicken in the slow cooker ensures it’s evenly cooked through and stays wonderfully moist. Finishing it off in the oven for 5 minutes ensures you get that crispy skin everyone will be fighting over.

  • 1.8kg whole chicken

  • 2 garlic cloves, smashed, peeled

  • 1 small lemon, halved

  • 1 brown onion, coarsely chopped

  • 2 carrots, peeled, coarsely chopped

  • 3 desiree potatoes, cut into 3-4cm pieces

  • Portuguese chicken seasoning, to sprinkle

  • 1 tbsp plain flour

  • Step 1

    Use paper towel to pat chicken dry. Place the garlic

    (2 garlic cloves, smashed, peeled) and lemon (1 small lemon, halved) into the cavity of the chicken (1.8kg whole chicken).

  • Step 2

    Place onion (1 brown onion, coarsely chopped) and carrot (2 carrots, peeled, coarsely chopped) into slow cooker. Place chicken on top and scatter the potato (3 desiree potatoes, cut into 3-4cm pieces) around. Pat the skin dry again and season with salt and pepper. Lightly sprinkle with the seasoning (Portuguese chicken seasoning, to sprinkle).

  • Step 3

    Fold a clean tea towel in half and place over the slow cooker, if possible (see note). Cover and cook on HIGH for 4 hours (or LOW for 6 hours) or until very tender.

  • Step 4

    Place a shelf in the centre of the oven. Preheat the grill to high. Carefully transfer the chicken to a rimmed baking tray. Use a slotted spoon to scoop out the vegetables and place around the chicken. Spray with oil and grill for 5 minutes or until golden brown.

  • Step 5

    For the gravy, tip the liquid from the slow cooker into a jug and set aside to settle. Scoop 2 tablespoons of fat from the top of the liquid and transfer to a small saucepan. Heat over medium heat. Add the flour (1 tbsp plain flour) and cook, stirring, for 1 minute. Slowly add 250ml (1 cup) of the remaining liquid in jug, stirring constantly. Bring to the boil and simmer for 2 minutes or until mixture has thickened.

    Serve the chicken and vegetables with the gravy.

Recipe Notes

Lay the tea towel without it touching the top of the chicken. It will depend on the size and shape of your slow cooker and chicken. The tea towel absorbs moisture from dripping onto the chicken. Otherwise, just put the lid on.
