Slow cooker pulled lamb


Recipe may contain gluten, peanuts, tree nuts, milk and fish.

If you want that tender, no knife required results, then you need to cook your lamb in a slow cooker. Serve in a pita bread (or any other kind of a flatbread) and you can toss leftovers in a salad the next day.

15 Ingredients

  • 2 tbsp olive oil

  • 1.5kg lamb shoulder roast, bone in (see note)

  • 1 brown onion, coarsely chopped

  • 4 garlic cloves, peeled

  • 3 dried bay leaves

  • 45g can anchovy fillets, drained

  • 3 thick strips lemon rind

  • 3 sprigs fresh lemon thyme, plus extra to serve

  • 125ml (1/2 cup) Massel Chicken Style Liquid Stock

  • 80ml (1/3 cup) dry white wine

  • 60ml (1/4 cup) fresh lemon juice

  • 1 tsp dried oregano

  • Pita breads, warmed, to serve

  • Fresh oregano leaves, to serve

  • Lemon wedges, to serve

  • Step 1

    (2 tbsp olive oil) in a large frying pan over medium-high heat. Cook lamb (1.5kg lamb shoulder roast, bone in (see note)), turning often, for 8 to 10 minutes or until browned.

  • Step 2

    Place the onion (1 brown onion, coarsely chopped), garlic (4 garlic cloves, peeled) and bay leaves (3 dried bay leaves) in the slow cooker. Top with anchovy (45g can anchovy fillets, drained), lemon rind (3 thick strips lemon rind) and thyme (3 sprigs fresh lemon thyme, plus extra to serve). Place the lamb on top and pour around the stock (125ml (1/2 cup) Massel Chicken Style Liquid Stock), wine (80ml (1/3 cup) dry white wine), juice (60ml (1/4 cup) fresh lemon juice) and oregano (1 tsp dried oregano). Cover and cook on LOW for 8 hours (or HIGH for 4 hours) or until the lamb is very tender and falling off the bone.

  • Step 3

    Roughly shred or carve the lamb. Serve with pita bread (Pita breads, warmed, to serve), pan juices, oregano (Fresh oregano leaves, to serve) leaves, lemon wedges (Lemon wedges, to serve) and extra thyme leaves.

Recipe Notes

Ensure the piece of lamb you purchase will fit into your slow cooker. If the lamb is slightly smaller in weight, it will not affect the cooking time. If you can’t fit a bone in shoulder roast in your slow cooker, replace it with boneless and remove all packaging.
