Slow cooker ‘antipasto’ penne


Recipe may contain gluten, peanuts, tree nuts, milk and fish.

This delicious one-pot pasta is packed with six vegies per serve.

14 Ingredients

  • 1 tbsp extra virgin olive oil

  • 1 red onion, cut into thin wedges

  • 2 garlic cloves, finely chopped

  • 85g prosciutto, roughly chopped

  • 1 large eggplant, cut into 3cm cubes

  • 1 large red capsicum, cut into 2cm pieces

  • 2 zucchini, halved, thickly sliced

  • 400g can crushed tomatoes

  • 2 vine-ripened tomatoes, roughly chopped

  • 3 cups dried penne pasta

  • 220g jar pitted kalamata olives, drained

  • 1/4 cup sun-dried tomatoes, roughly chopped

  • Chopped fresh flat-leaf parsley leaves, to serve

  • Grated parmesan, to serve

  • Step 1

    Heat oil

    (1 tbsp extra virgin olive oil) in flameproof bowl of slow cooker or large, deep frying pan over medium-high heat. Add onion (1 red onion, cut into thin wedges). Cook, stirring, for 3 minutes or until just starting to soften. Add garlic (2 garlic cloves, finely chopped) and prosciutto (85g prosciutto, roughly chopped). Cook, stirring, for 2 minutes or until prosciutto just starts to brown.

  • Step 2

    Transfer bowl to slow cooker. Add eggplant (1 large eggplant, cut into 3cm cubes), capsicum (1 large red capsicum, cut into 2cm pieces), zucchini (2 zucchini, halved, thickly sliced), crushed tomatoes (400g can crushed tomatoes) and fresh tomato (2 vine-ripened tomatoes, roughly chopped). Cover. Cook on HIGH for 3 hours.

  • Step 3

    Add pasta (3 cups dried penne pasta), olives (220g jar pitted kalamata olives, drained) and sun-dried tomato (1/4 cup sun-dried tomatoes, roughly chopped). Stir to combine. Season with pepper. Cover. Cook for a further 40 minutes or until pasta is just tender. Serve topped with parsley (Chopped fresh flat-leaf parsley leaves, to serve) and parmesan (Grated parmesan, to serve).
