Sausage roll maker custard and apple pies

Save time by prepping the custard a day or two in advance.

7 Ingredients

  • 2 tbsp custard powder

  • 250ml (1 cup) milk

  • 2 tbsp caster sugar

  • 800g can apple slices pie fruit

  • 3 sheets frozen puff pastry, just thawed

  • 40g butter, melted

  • Cinnamon sugar, to dust

4 Method Steps

  • Step 1

    (2 tbsp custard powder) in a small saucepan and add 2 tablespoons milk. Stir until smooth. Add the remaining milk and the sugar (2 tbsp caster sugar). Cook over medium-low heat, stirring, for 1 minute or until mixture boils and thickens. Transfer to a bowl and set aside for 5 minutes, stirring occasionally, until cooled. Place in the fridge for 15 minutes or until set.

  • Step 2

    Place pie apple slices (800g can apple slices pie fruit) in a strainer over a bowl to drain excess liquid.

  • Step 3

    Cut pastry sheets (3 sheets frozen puff pastry, just thawed) in half. Place 1 half over the base of a sausage roll maker and gently press into the 4 wells. Spoon 1 tablespoon of custard into each well and top each with a level ¼ cup of pie apple. Lay another pastry half over the top. Close the lid. Turn on the sausage roll maker and cook for 10 minutes or until golden.

  • Step 4

    Turn off sausage roll maker and transfer pies to a wire rack. Leave lid open to allow sausage roll maker to cool a little (just warm is fine, but not hot). Use kitchen scissors to separate pies and trim pastry edges. Brush with butter (40g butter, melted) and sprinkle with cinnamon sugar (Cinnamon sugar, to dust). Repeat with remaining ingredients to cook 2 more batches. Cool slightly. Serve.
