Salted choc-chip cookie cups

For an easy cheat’s dessert, use bought cookie mix to make little cookie cups and then fill with dark chocolate ganache. Add a little sprinkle of salt to bring out the sweetness of the chocolate.

  • 1 x 480g pkt Delicious Salted Choc-Chip Cookie Pie Mix

  • 120g unsalted butter, at room temperature

  • 1 egg, lightly whisked

  • 180g block dark chocolate, coarsely chopped

  • 100ml thickened cream

  • Sea salt flakes

5 Method Steps


  • Step 1

    Preheat oven to 190C/170C fan forced. Grease three 12-hole patty pans.

  • Step 2

    Combine cookie pie mix

    (1 x 480g pkt Delicious Salted Choc-Chip Cookie Pie Mix), butter (120g unsalted butter, at room temperature) and egg (1 egg, lightly whisked) in a bowl. Shape into a disc and wrap in plastic wrap. Place in the fridge for 30 minutes to chill.


  • Step 3

    Roll the dough out between 2 sheets of baking paper to 3-4mm thick. Use a pastry cutter about the same size as your patty pan holes to cut out 36 discs. Transfer discs to prepared pan holes. Bake for 13-15 minutes or until golden. Carefully press the softened cookies into the pan to form a cup shape. Set aside to cool completely.

  • Step 4

    Meanwhile, place the chocolate (180g block dark chocolate, coarsely chopped) and cream (100ml thickened cream) into a microwave-safe bowl and microwave on High for 60-90 seconds. Set aside for 5 minutes before stirring until smooth.

  • Step 5

    Divide ganache among the cookie cups. Sprinkle with a little sea salt (Sea salt flakes). Place in the fridge to chill until the ganache is set.
