Rocky road ice-cube tray dessert pies

When you need an easy dessert fix these mini rocky road pies will save the day. They are made with the help of an ice-cube tray and use puff pastry plus a sweet filling of your choice. We’ve filled these ones with marshmallows and Toblerone pieces but check out the Notes section for more ideas.

5 Ingredients

  • 2 sheets puff pastry, just thawed

  • 1 egg, lightly beaten

  • 42 mini marshmallows

  • 40g chopped glacé cherries

  • 100g Toblerone milk chocolate bar, chopped

5 Method Steps

  • Step 1

    Preheat oven to 220C. Lightly grease a baking tray and line with baking paper.

  • Step 2

    Fold 1 sheet of puff pastry

    (2 sheets puff pastry, just thawed) in half. Use a rolling pin to roll out slightly until it will easily cover a 14-hole ice cube tray. Cut remaining sheet of pastry in half lengthways (reserve 1 half for another use).

  • Step 3

    Lay rolled pastry over the ice cube tray and gently press pastry into each hole, ensuring pastry does not tear.

  • Step 4

    Fill each pastry hole with a few mini marshmallows, half a teaspoon of cherries and a few pieces of chocolate. Brush edges of pastry with egg (1 egg, lightly beaten). Place pastry piece on top, pressing gently to secure. Trim any excess pastry. Freeze for 1 hour or until pastry is frozen.

  • Step 5

    Release pastry parcel from the ice cube tray and place flat-side down on the prepared tray. Brush with remaining egg. Bake for 22-25 minutes or until the pastry is puffed and golden. Serve immediately.

Recipe Notes

When you’re pressing the pastry into the ice cube trays, dust your hands/fingers in flour first, to prevent the pastry sticking. It’s also best to almost freeze the pastry pockets before releasing from the trays or they may stick and tear upon release.
