Roasted sweet potato, feta and cranberry salad

Roast sweet potato and our best tahini dressing take this easy, speedy lunch to the next level!

8 Ingredients


  • 2 tsp fresh lemon juice

  • 1 tsp tahini

  • 125g can four bean mix, rinsed, drained

  • 100g chopped roasted sweet potato

  • 30g baby spinach and rocket mix

  • 25g feta, crumbled

  • 1 tbsp dried cranberries

  • 2 tsp pepitas

2 Method Steps


  • Step 1

    Combine the lemon juice

    (2 tsp fresh lemon juice), tahini (1 tsp tahini) and 2-3 tsp water in a bowl.


  • Step 2

    Combine the beans (125g can four bean mix, rinsed, drained), sweet potato (100g chopped roasted sweet potato), spinach and rocket (30g baby spinach and rocket mix), feta (25g feta, crumbled) and cranberries (1 tbsp dried cranberries) in a serving bowl. Drizzle over the tahini mixture and sprinkle with pepitas (2 tsp pepitas) to serve.
