With crunchy noodles, only $5.45 a serve and a creamy Kewpie mayo dressing, this quick and easy chicken mince salad hits all the right notes.
1 baby cos lettuce
1 tbsp peanut oil
500g chicken mince
125ml (1/2 cup) Ayam Honey and Soy Marinade and Sauce
250g packet qukes (baby cucumbers)
1 long fresh red chilli (optional)
100g packet fried noodles
80ml (1/3 cup) Kewpie Japanese Dressing Roasted Sesame
Fresh coriander sprigs, to serve
5 Method Steps
Step 1Heat a large frying pan over high heat.
Step 2While the pan heats up, separate the lettuce(1 baby cos lettuce) leaves and wash well. Arrange on a serving platter.

Step 3Pour the oil (1 tbsp peanut oil) into the hot pan. Add the chicken (500g chicken mince) and cook, stirring occasionally, for 3-4 minutes or until the chicken changes colour. Add the sauce and (125ml (1/2 cup) Ayam Honey and Soy Marinade and Sauce) cook, tossing, for 2-3 minutes or until any excess liquid has evaporated and the sauce coats the chicken. Remove from heat and set aside to cool slightly.
Step 4Meanwhile, thickly slice the baby cucumbers (250g packet qukes (baby cucumbers)) diagonally. Peel and thinly slice the avocado (1 avocado). Peel then shred the carrot (1 carrot) into long strips and thinly slice the chilli (1 long fresh red chilli (optional)), if using.
Step 5Arrange the chicken mixture, cucumber and carrot on the platter. Scatter over the noodles (100g packet fried noodles). Top with the avocado and drizzle over the sesame dressing (80ml (1/3 cup) Kewpie Japanese Dressing Roasted Sesame). Sprinkle with coriander (Fresh coriander sprigs, to serve) and chilli, if using.
