Here is a quick working from home lunch or snack idea when you really don’t feel like making another sandwich. Mix all the ingredients, cook the noodles as per the packet instructions and combine. You can add a fried egg on top for some protein.

200g shelf-fresh hokkien noodles

Step 1Place peanut butter(2 tbsp crunchy peanut butter), vinegar (2 tbsp rice wine vinegar), soy sauce (2 tbsp soy sauce) and maple syrup (2 tbsp maple syrup) in a serving bowl and stir until combined.
