Quick peanut butter noodles

Here is a quick working from home lunch or snack idea when you really don’t feel like making another sandwich. Mix all the ingredients, cook the noodles as per the packet instructions and combine. You can add a fried egg on top for some protein.

  • 2 tbsp crunchy peanut butter

  • 2 tbsp rice wine vinegar

  • 2 tbsp soy sauce

  • 2 tbsp maple syrup

  • 200g shelf-fresh hokkien noodles

  • Sliced green shallots and chopped roasted peanuts, to serve

  • Step 1

    (2 tbsp crunchy peanut butter), vinegar (2 tbsp rice wine vinegar), soy sauce (2 tbsp soy sauce) and maple syrup (2 tbsp maple syrup) in a serving bowl and stir until combined.


  • Step 2

    Cook the noodles (200g shelf-fresh hokkien noodles) following packet directions. Drain then add to bowl. Toss until noodles and sauce are well combined.

  • Step 3

    Sprinkle with onion and peanuts (Sliced green shallots and chopped roasted peanuts, to serve) to serve.
