Protein-packed breakfast bowl

Ready in 10 minutes, this breakfast bowl, packed with quinoa, avocado and egg, will get your day off to a healthy start.

7 Ingredients

  • 50g baby spinach

  • 75g (1/2 cup) cooked quinoa, warmed

  • 1 soft-boiled egg, peeled, sliced

  • 1/4 avocado, sliced

  • 1 tsp fresh lemon juice

  • 1 tsp extra virgin olive oil

  • 2 tsp chopped roasted unsalted almonds

  • Step 1

    Place the spinach

    (50g baby spinach) in a colander. Pour over boiling water. Use clean hands to squeeze any excess liquid from the spinach.

  • Step 2

    Arrange quinoa (75g (1/2 cup) cooked quinoa, warmed), spinach, egg (1 soft-boiled egg, peeled, sliced) and avocado (1/4 avocado, sliced) in a serving bowl. Drizzle over lemon juice (1 tsp fresh lemon juice) and olive oil (1 tsp extra virgin olive oil). Top with almonds (2 tsp chopped roasted unsalted almonds) to serve.
