How to get even the most ardent cauliflower haters to eat it? Make it taste like pizza! Stuffed full of ham, cheese and passata, no will be able to resist this baked cauliflower recipe.
100g shaved ham, finely chopped
150g (1 ½ cups) pre-grated pizza cheese blend
180ml (¾ cup) passata or pasta sauce
1kg whole cauliflower, leaves removed
1 tablespoon rice bran or vegetable oil
2 teaspoons Italian seasoning
3 tablespoons finely grated parmesan
Basil leaves, to serve (optional)
4 Method Steps
Step 1Preheat oven to 200°C.
Step 2Combine ham(100g shaved ham, finely chopped), 1 cup of cheese (150g (1 ½ cups) pre-grated pizza cheese blend) and passata (180ml (¾ cup) passata or pasta sauce) in a small bowl.

Step 3Cut the core and large inner stalks from the cauliflower (1kg whole cauliflower, leaves removed), careful to keep florets intact. Brush florets with oil (1 tablespoon rice bran or vegetable oil) and sprinkle over seasoning (2 teaspoons Italian seasoning). Place in a small roasting tray cavity-side up. Spoon the ham mixture into the cavity, and use the back of the spoon to push to ensure the cavity is fully stuffed. Sprinkle over half the cheese. Add 60ml (¼ cup) water to the roasting tray. Cover tray with foil and roast for 45-50 minutes. Remove foil and sprinkle with remaining cheese and grated parmesan (3 tablespoons finely grated parmesan). Roast for 15-20 minutes or until the cheese is golden and a knife inserted into the cauli meets no resistance.
Step 4Cut into 4 wedges and serve immediately.
Tip: If needed, trim a little off the top of the cauliflower so that it sits flat in the roasting tray.
