Pina colada affogato

Inspired by the classic Pina Colada cocktail, this affogato features a splash of Malibu coconut rum with pineapple and mango ice-cream, transporting you to a tropical paradise with every scoop.

6 Ingredients

  • 30ml Malibu coconut rum

  • 30ml Captain Morgan Tropical Mango & Pineapple

  • 15ml chilled pineapple juice

  • 1 scoop coconut ice-cream

  • Maraschino cherries, to serve

  • Fresh pineapple wedges, to serve

  • Step 1

    (30ml Malibu coconut rum), Captain Morgan (30ml Captain Morgan Tropical Mango & Pineapple) and pineapple juice (15ml chilled pineapple juice) into a cocktail shaker filled with ice (1 scoop coconut ice-cream). Shake for 30 seconds. Pour into a chilled martini glass.

  • Step 2

    Carefully top with a large scoop of ice-cream (the ice-cream should float, not sink).

  • Step 3

    Skewer maraschino cherries onto a paper umbrella pick. Decorate the pina colada with the umbrella and cherries (Maraschino cherries, to serve), and the pineapple wedges (Fresh pineapple wedges, to serve).
