Use your precious pie maker to make these gooey brie and cranberry bites – they’re great for parties and Christmas celebrations.
1/2 cup jellied cranberry sauce
2 tsp fresh thyme leaves
1 garlic clove, crushed
5 sheets frozen puff pastry, partially thawed
125g brie, cut into 1cm cubes (see note)
2 tbsp finely chopped walnuts
1 egg, lightly beaten
Extra cranberry sauce, to serve
Fresh thyme sprigs, to serve
3 Method Steps
Step 1Combine the cranberry sauce(1/2 cup jellied cranberry sauce), thyme (2 tsp fresh thyme leaves) and garlic (1 garlic clove, crushed) in a small bowl. Season with salt and pepper.

Step 2Cut pastry (5 sheets frozen puff pastry, partially thawed) into 24 x 9cm rounds. Spoon 1 teaspoon cranberry mixture into the centres of 12 pastry rounds. Top each with 4 pieces of brie (125g brie, cut into 1cm cubes (see note)). Sprinkle with walnuts (2 tbsp finely chopped walnuts). Cover with remaining pastry rounds. Pinch and fold edges together to seal. Brush tops with egg (1 egg, lightly beaten). Season with salt and pepper.
Step 3Preheat pie maker. Place 4 rounds in holes. Close lid. Cook for 10 minutes or until golden and puffed. Transfer to a plate. Repeat with remaining rounds. Serve with cranberry sauce (Extra cranberry sauce, to serve) and sprinkled with thyme sprigs (Fresh thyme sprigs, to serve).
- You’ll need a firm style of brie for this recipe so the cheese doesn’t melt too much in the pastry cases.
