Pancake shaker impossible zucchini slice

We love the classic zucchini slice and are always looking for new ways to twist it or improve on it. In this cheat’s version, we use a pancake shaker mix to create a lovely, three-layered zucchini slice that’s perfect for a light lunch or to throw into your kid’s lunchbox.

8 Ingredients


  • 2 zucchini, coarsely grated

  • 4 eggs

  • 330ml (1 1/3 cups) milk

  • 60ml (1/4 cup) vegetable oil

  • 180g (1 cup) original (plain) pancake mix

  • 200g shortcut bacon, finely chopped

  • 70g (2/3 cup) coarsely grated cheddar

  • 2 tbsp finely chopped fresh chives, plus extra, to serve

4 Method Steps


  • Step 1

    Preheat oven to 180C/160C fan forced. Grease and line a 20x30cm slice pan, allowing the paper to overhang the sides.

  • Step 2

    Place zucchini
    (2 zucchini, coarsely grated)
    in a colander and use clean hands to squeeze out excess liquid.

  • Step 3

    Whisk together eggs
    (4 eggs)
    , milk
    (330ml (1 1/3 cups) milk)
    , oil
    (60ml (1/4 cup) vegetable oil)
    and pancake mix
    (180g (1 cup) original (plain) pancake mix)
    in a large bowl. Season. Add zucchini, bacon
    (200g shortcut bacon, finely chopped)
    , cheddar
    (70g (2/3 cup) coarsely grated cheddar)
    and chives
    (2 tbsp finely chopped fresh chives, plus extra, to serve)
    and stir until combined. Pour mixture into pan and bake for 35 minutes or until golden and just set. Set aside to cool for 30 minutes.

  • Step 4

    Sprinkle with extra chives to serve.
