Pancake shaker impossible quiche

Add a bit of magic to your cooking with this clever impossible quiche. As this beauty bakes, it magically separates into three distinct layers – a base, a cheesy ham centre and a golden zucchini topping. Tip: make sure to allow an extra 30 minutes for cooling!

  • 4 eggs, lightly whisked

  • 375ml (1 1/2 cups) milk

  • 50g butter, melted

  • 180g (1 cup) original (plain) pancake mix

  • 1 zucchini, coarsely grated

  • 100g double smoked leg ham, coarsely chopped

  • 70g (2/3 cup) coarsely grated cheddar

  • 2 green shallots, thickly sliced

4 Method Steps


  • Step 1

    Preheat oven to 200C/180C fan forced. Grease a 19cm (base size) 1.5L (6 cup) pie dish.

    Whisk together eggs

    (4 eggs, lightly whisked), milk (375ml (1 1/2 cups) milk), butter (50g butter, melted) and pancake mix (180g (1 cup) original (plain) pancake mix) in a large bowl. Season.


  • Step 3

    Place zucchini (1 zucchini, coarsely grated) in a colander and use clean hands to squeeze out excess liquid. Scatter zucchini, ham (100g double smoked leg ham, coarsely chopped), cheddar (70g (2/3 cup) coarsely grated cheddar) and shallot (2 green shallots, thickly sliced) over base of pie dish. Pour over egg mixture. Bake for 40-45 minutes or until golden and just set.

  • Step 4

    Set quiche aside for 30 minutes to cool slightly before serving.
