lime coconut cocktail comes with its own ice‑cream.
90ml chilled pineapple juice
2 tbsp thickened cream
Streets Splice Pine Lime ice-cream
Pineapple wedge and leaf, to serve
2 Method Steps
Step 1Combine the Midori
(30ml Midori), Malibu
(30ml Malibu) and pineapple juice
(90ml chilled pineapple juice) in a cocktail shaker. Add ice
(Ice cubes) and shake until combined. Strain into a wide cocktail glass.
Step 2Spoon over thickened cream (it will sink at first, but then rise to the surface). Top with a Streets Splice Pine Lime ice-cream
(Streets Splice Pine Lime ice-cream), pineapple wedge and leaf
(Pineapple wedge and leaf, to serve).
