It’s no secret how much we love a zucchini slice so it was only a matter of time before we invented yet another variation! This one is made in a mug and is ready in 10 minutes flat so perfect for lunch when you’re working from home or just feel like a little savoury snack.

1 zucchini, coarsely grated
1 shortcut bacon rasher, finely chopped
1/2 brown onion, finely chopped
40g butter, at room temperature
150g (1 cup) self-raising flour
1 egg, lightly whisked
60ml (1/4 cup) milk
25g (1/4 cup) coarsely grated cheddar
3 Method Steps
Step 1Lightly grease two 375ml (1 1/2 cups) microwave-safe mugs.
Step 2Place zucchini(1 zucchini, coarsely grated), bacon (1 shortcut bacon rasher, finely chopped) and onion (1/2 brown onion, finely chopped) in a microwave-safe bowl and microwave on High, stirring halfway through cooking, for 2 minutes or until vegetables are tender. Drain. Return to bowl. Stir in butter (40g butter, at room temperature) until melted. Season.

Step 3Add flour (150g (1 cup) self-raising flour), egg (1 egg, lightly whisked), milk (60ml (1/4 cup) milk) and cheese (25g (1/4 cup) coarsely grated cheddar) to zucchini mixture and stir until combined. Divide mixture evenly between the prepared mugs. Microwave, one at a time, on High for 2 minutes or until puffed and just firm when lightly touched. Set aside to cool slightly before serving.
The zucchini slice will be hot so carefully remove mug from microwave and allow to cool slightly before serving.
