Microwave lemon delicious in a mug

This quick and easy lemon pudding is individually portioned in mugs so everyone gets their own. Zap it in the microwave for when you’re in the mood for something lemony and sweet but don’t have a lot of time.

8 Ingredients

  • 100g (2/3 cup) self-raising flour

  • 100g (1/2 cup) caster sugar

  • 60g butter, melted, cooled

  • 60ml (1/4 cup) milk

  • 1 egg, lightly whisked

  • 1 tbsp finely grated lemon rind

  • 60ml (1/4 cup) fresh lemon juice

  • 80ml (1/3 cup) boiling water

  • Step 1

    Lightly grease four 250ml (1 cup) microwave-safe mugs.

    Combine the flour

    (100g (2/3 cup) self-raising flour) and 70g (1/3 cup) sugar in a bowl. Add the butter (60g butter, melted, cooled), milk (60ml (1/4 cup) milk), egg (1 egg, lightly whisked), lemon rind (1 tbsp finely grated lemon rind) and 2 tbsp juice and whisk until smooth and just combined. Divide mixture among prepared mugs.

  • Step 3

    Place the boiling water (80ml (1/3 cup) boiling water), remaining sugar and remaining juice in a small jug and stir until combined. Spoon 1 1/2 tbsp (one-quarter of the juice mixture) over one mug cake. Microwave on High for 1 minute 20 seconds or until puffed and cake springs back when lightly touched. Repeat, 1 at a time, with remaining mug cakes and juice mixture. Serve immediately.
