You only need 5 ingredients and 20 minutes to whip up this tasty pulled pork and rice bowl. It is the ideal way to use up any cooked rice you have lying around in the fridge. To make your own Mexican rice, simply toss rice, black beans and a little tomato salsa together. Yum.
800g packet Woolworths Cook Mild Mexican Inspired Pork Shoulder
2 x 240g tubs Old El Paso Mexi Rice with Chilli and Veggies
250g cherry tomatoes, halved
1 large avocado, sliced
100g packet baby spinach
Olive oil, to drizzle
3 Method Steps
Step 1Warm the pork
(800g packet Woolworths Cook Mild Mexican Inspired Pork Shoulder) in the microwave following packet directions. Transfer to a large bowl and shred the meat with 2 forks.
Step 2Meanwhile, warm the rice
(2 x 240g tubs Old El Paso Mexi Rice with Chilli and Veggies) following packet directions.
Step 3Divide rice and pork among serving bowls. Top with the tomato
(250g cherry tomatoes, halved), avocado
(1 large avocado, sliced) and spinach
(100g packet baby spinach). Season and drizzle over a little oil
(Olive oil, to drizzle) to serve.
If you have cooked rice already in the fridge, use it to make Mexican rice. Toss with black or kidney beans and a little bought tomato salsa.
