Mexican prawn and corn nachos

Just like classic nachos, this twist with garlic prawns and feta cheese is super quick and easy. Use microwave rice and pre-marinated prawns to make it breezier still.

10 Ingredients


  • 1 tsp olive oil

  • 4 sweet corncobs

  • 250g packet microwave black rice

  • 220g packet Coles Australian Garlic Prawns

  • 2 avocados, mashed

  • 200g plain corn chips

  • 100g feta, crumbled

  • 1 green shallot, thinly sliced

  • Fresh coriander sprigs, to serve

  • Lime wedges, to serve

4 Method Steps


  • Step 1

    Heat oil

    (1 tsp olive oil) in a large frying pan over medium heat. Add corn (4 sweet corncobs) and cook, turning occasionally, for 15 minutes or until corn is tender and charred (alternatively, you can do this on a hot barbecue plate).


  • Step 2

    Meanwhile, heat the rice (250g packet microwave black rice) following packet directions.

  • Step 3

    Transfer corn to a chopping board. Add prawns (220g packet Coles Australian Garlic Prawns) to the pan or barbecue. Cook, turning once, for 2-3 minutes or until just cooked through. Use a sharp knife to cut down the length of the corncobs to remove kernels.

  • Step 4

    Divide avocado (2 avocados, mashed) among serving plates. Top with corn chips (200g plain corn chips), rice and prawns. Sprinkle with feta (100g feta, crumbled), shallot (1 green shallot, thinly sliced) and coriander (Fresh coriander sprigs, to serve). Serve with lime wedges (Lime wedges, to serve).
