Start stockpiling mangos: you’ll need them when you inevitably start making this easy frozen cocktail on repeat.
55g (1/4 cup) caster sugar
300g frozen chopped mango
60ml (1/4 cup) fresh orange juice
Fresh mint leaves, to decorate
Dehydrated orange slices, to decorate (optional, see tip)
2 Method Steps
Step 1Place sugar(55g (1/4 cup) caster sugar) and 60ml (1 ⁄4 cup) water in a saucepan over medium heat. Cook, stirring, until sugar dissolves. Increase heat to medium-high. Bring to the boil. Cook for 5 minutes or until it thickens slightly. Pour into a heatproof jug. Place in fridge for 1 hour to chill.

Step 2Place mango (300g frozen chopped mango) and 2 tablespoonfuls of the sugar syrup in a blender. Blend until combined. Add vodka (100ml vodka) and juice (60ml (1/4 cup) fresh orange juice). Blend until smooth. Divide the mixture between 2 serving glasses. Top with mint (Fresh mint leaves, to decorate) and orange slices (Dehydrated orange slices, to decorate (optional, see tip)), if using.
To make the orange slices, bake thin slices of orange on a wire rack placed over a baking tray in a 110C/90C fan forced oven for 11/2 hours or until dry and crisp.
