Mango martini slushie

Start stockpiling mangos: you’ll need them when you inevitably start making this easy frozen cocktail on repeat.

6 Ingredients

  • 55g (1/4 cup) caster sugar

  • 300g frozen chopped mango

  • 100ml vodka

  • 60ml (1/4 cup) fresh orange juice

  • Fresh mint leaves, to decorate

  • Dehydrated orange slices, to decorate (optional, see tip)

    (55g (1/4 cup) caster sugar) and 60ml (1 ⁄4 cup) water in a saucepan over medium heat. Cook, stirring, until sugar dissolves. Increase heat to medium-high. Bring to the boil. Cook for 5 minutes or until it thickens slightly. Pour into a heatproof jug. Place in fridge for 1 hour to chill.

  • Step 2

    Place mango (300g frozen chopped mango) and 2 tablespoonfuls of the sugar syrup in a blender. Blend until combined. Add vodka (100ml vodka) and juice (60ml (1/4 cup) fresh orange juice). Blend until smooth. Divide the mixture between 2 serving glasses. Top with mint (Fresh mint leaves, to decorate) and orange slices (Dehydrated orange slices, to decorate (optional, see tip)), if using.

Recipe Notes

To make the orange slices, bake thin slices of orange on a wire rack placed over a baking tray in a 110C/90C fan forced oven for 11/2 hours or until dry and crisp.
