Lemon chicken chow mein


Recipe may contain gluten, peanuts, tree nuts, milk and fish.

Ready in 35 minutes, this easy dinner is made with chicken stir fry strips, chow mein noodles and a simple lemon sauce.

16 Ingredients

  • 280g packet fresh chow mein noodles

  • 1 tbsp peanut oil

  • 500g chicken stir-fry strips

  • 120g (3 cups) shredded wombok (Chinese cabbage)

  • 100g shredded carrot

  • 150g snow peas, thinly sliced lengthways

  • 2 green shallots, sliced diagonally
  • Lemon sauce

  • 2 tsp peanut oil

  • 2 garlic cloves, finely chopped

  • 2 tsp finely chopped fresh ginger

  • 125ml (1/2 cup) Massel Chicken Style Liquid Stock

  • 60ml (1/4 cup) fresh lemon juice

  • 2 tbsp Chinese cooking wine

  • 2 tbsp light soy sauce

  • 55g (1/4 cup) caster sugar

  • 2 tsp cornflour

  • Step 1

    Bring a large saucepan of water to the boil. Add the noodles

    (280g packet fresh chow mein noodles) and bring to the boil. Cook, stirring, for 2 minutes. Drain and refresh under cold running water. Drain.

  • Step 2

    Meanwhile, to make the lemon sauce, heat the oil (2 tsp peanut oil) in a wok over medium heat. Add the garlic (2 garlic cloves, finely chopped) and ginger (2 tsp finely chopped fresh ginger). Cook, stirring, for 30 seconds or until aromatic. Add the stock (125ml (1/2 cup) Massel Chicken Style Liquid Stock), lemon juice (60ml (1/4 cup) fresh lemon juice), wine (2 tbsp Chinese cooking wine), soy sauce (2 tbsp light soy sauce), sugar (55g (1/4 cup) caster sugar) and cornflour (2 tsp cornflour). Cook, stirring, for 2 minutes or until the mixture thickens. Transfer to a jug. Rinse and dry the wok.

  • Step 3

    Heat the oil (1 tbsp peanut oil) in the wok over high heat. Cook the chicken (500g chicken stir-fry strips), in 2 batches, tossing, for 3 minutes or until golden. Transfer to a plate. Add the wombok (120g (3 cups) shredded wombok (Chinese cabbage)) and carrot (100g shredded carrot) to the wok and cook, stirring, for 3 minutes or until the cabbage is wilted. Add the lemon sauce, noodles, snow peas (150g snow peas, thinly sliced lengthways), chicken and half the shallot (2 green shallots, sliced diagonally). Use tongs to toss until well combined.

    Sprinkle with the remaining shallot and serve immediately.
