  • 170g (1 cup) burghul (fine cracked wheat)

  • 375ml (1 1/2 cups) boiling water

  • 1 large Lebanese cucumber, finely chopped

  • 1/2 large red onion, finely chopped

  • 400g can chickpeas, rinsed, drained

  • 150g feta, finely crumbled

  • 1/2 cup chopped fresh continental parsley leaves

  • 1/4 cup chopped fresh mint leaves

  • 55g (1/3 cup) pistachio kernels, coarsely chopped

  • 2 tbsp fresh lemon juice

  • 2 tbsp extra virgin olive oil

  • Lemon wedges, to serve (optional)

  • Step 1

    Place the burghul

    (170g (1 cup) burghul (fine cracked wheat)) in a heatproof bowl. Cover with the boiling water (375ml (1 1/2 cups) boiling water) and set aside for 15 minutes to soak. Use a fork to separate the grains.


  • Step 2

    Add the cucumber (1 large Lebanese cucumber, finely chopped), onion (1/2 large red onion, finely chopped), chickpeas (400g can chickpeas, rinsed, drained), feta (150g feta, finely crumbled), parsley (1/2 cup chopped fresh continental parsley leaves), mint (1/4 cup chopped fresh mint leaves) and pistachio (55g (1/3 cup) pistachio kernels, coarsely chopped) to the burghul and toss until well combined. Add the lemon juice (2 tbsp fresh lemon juice) and oil (2 tbsp extra virgin olive oil). Season. Toss until well combined. Serve with extra lemon wedges (Lemon wedges, to serve (optional)), if using.
