Jaffle maker fairy bread doughnuts

Who needs store-bought doughnuts when you can use a jaffle maker to make your own? With a fairy bread twist, these sweet treats make for the ultimate Aussie party food.

11 Ingredients

  • 3 cups plain flour

  • 1 tbsp baking powder

  • 1 1/2 cups caster sugar

  • 1 1/2 cups milk

  • 125g butter, melted, cooled

  • 3 eggs

  • 3 tsp vanilla extract

  • 250g jar raspberry jam

  • 1/2 x 350g jar hundreds and thousands
  • Icing

  • 3 cups icing sugar mixture

  • Pink liquid food colouring

6 Method Steps

  • Step 1

    Sift flour and baking powder into a large bowl. Stir in sugar. Make a well.

  • Step 2

    Whisk milk, butter, eggs and vanilla in a large jug. Add to well. Whisk to combine.

  • Step 3

    Preheat a jaffle maker. Spoon 1/4 cup batter into each hole. Close lid. Cook for 5 minutes or until golden and just firm to touch. Transfer doughnuts to a wire rack. Repeat with remaining batter.

  • Step 4

    Spoon jam into a piping bag fitted with a 1cm-round plain nozzle. Push the nozzle into the top of each doughnut to form a hole and pipe jam into holes (see note).

  • Step 5

    To make the icing, whisk the icing sugar with 2 tablespoons warm water until mixture is smooth and a thick spreadable consistency. Tint pink with food colouring.

  • Step 6

    Place hundreds and thousands in a shallow bowl. Spoon 2 teaspoons icing on the top of each doughnut and spread with a warm knife to cover. Press doughnut in hundreds and thousands. Return to rack. Set aside for 20 minutes or until icing is set. Serve.

Recipe Notes

  • If jam flows out of holes, spread top with a spatula to level.
  • Doughnuts are best made on the day of serving.
  • We used a 4-hole jaffle maker. Total cooking time will be greater if you have a 2-hole jaffle maker.
