Simple roast chicken covered in a garlicky honey mixture – meet your new favourite Sunday dinner.
2.2kg whole chicken
3/4 cup Massel Chicken Style Liquid Stock
6 sprigs fresh thyme
3 garlic cloves, peeled, bruised
1/4 cup honey
Extra 2 tsp honey
Extra fresh thyme sprigs, to serve
4 Method Steps
Step 1Preheat oven to 150C/130C fan-forced.
Step 2Pat chicken dry with paper towel (including cavity). Place in a roasting pan. Tie up legs with kitchen string. Pour stock around chicken. Add thyme and garlic. Drizzle chicken all over with honey. Season well with salt and pepper.
Step 3Roast for 2 hours, basting chicken with pan juices every 30 minutes, or until chicken is cooked through.
Step 4Drizzle chicken with extra honey. Stand for 10 minutes to rest. Serve chicken with pan juices, and sprinkled with extra thyme.
