Hot honey roast chicken


Recipe may contain gluten, peanuts, tree nuts, milk and soy.

Simple roast chicken covered in a garlicky honey mixture – meet your new favourite Sunday dinner.

7 Ingredients

  • 2.2kg whole chicken

  • 3/4 cup Massel Chicken Style Liquid Stock

  • 6 sprigs fresh thyme

  • 3 garlic cloves, peeled, bruised

  • 1/4 cup honey

  • Extra 2 tsp honey

  • Extra fresh thyme sprigs, to serve

4 Method Steps

  • Step 1

    Preheat oven to 150C/130C fan-forced.

  • Step 2

    Pat chicken dry with paper towel (including cavity). Place in a roasting pan. Tie up legs with kitchen string. Pour stock around chicken. Add thyme and garlic. Drizzle chicken all over with honey. Season well with salt and pepper.

  • Step 3

    Roast for 2 hours, basting chicken with pan juices every 30 minutes, or until chicken is cooked through.

  • Step 4

    Drizzle chicken with extra honey. Stand for 10 minutes to rest. Serve chicken with pan juices, and sprinkled with extra thyme.
