Healthy chilli pork and basil stir fry

A healthy take on the Thai classic, this no-fuss stir-fry is flavoured by fragrant Thai basil and is low calorie – a great midweek dinner option!

10 Ingredients


  • 1 long fresh red chilli, deseeded, thinly sliced, plus extra sliced chilli, to serve (optional)

  • 1/3 cup stir-fry sauce (see Notes)

  • 2 tsp finely grated fresh ginger

  • 3 tsp sesame oil

  • 500g pork fillet, trimmed, thinly sliced

  • 1 large red onion, cut into thin wedges

  • 1 small bunch fresh basil, stems thinly sliced, leaves picked

  • 1 head broccoli, cut into florets, stems thinly sliced

  • 2 large carrots, scrubbed, cut into thin matchsticks

  • 500g packet frozen carrot, cauliflower and broccoli rice

5 Method Steps


  • Step 1

    Add the thinly sliced chilli

    (1 long fresh red chilli, deseeded, thinly sliced, plus extra sliced chilli, to serve (optional)) to the stir-fry sauce (1/3 cup stir-fry sauce (see Notes)) and stir until well combined. Set sauce aside until required.


  • Step 2

    Combine the ginger (2 tsp finely grated fresh ginger) and 2 tsp sesame oil (3 tsp sesame oil) in a shallow dish. Add the pork (500g pork fillet, trimmed, thinly sliced) and stir to coat. Set aside for 5 minutes.

  • Step 3

    Heat a large wok over high heat. Stir-fry the pork, in 2 batches, for 2-3 minutes or until golden. Transfer to a plate.

  • Step 4

    Return the wok to high heat. Add the onion (1 large red onion, cut into thin wedges) and remaining oil. Stir-fry for 1-2 minutes. Add the basil stems (1 small bunch fresh basil, stems thinly sliced, leaves picked), broccoli stems (1 head broccoli, cut into florets, stems thinly sliced) and carrot (2 large carrots, scrubbed, cut into thin matchsticks). Stir-fry for 1 minute. Add the broccoli (500g packet frozen carrot, cauliflower and broccoli rice) florets and 1 tbs water. Stir-fry for 1-2 minutes or until veg is almost tender. Add the stir-fry sauce. Return the pork to the wok. Stir-fry for 1 minute or until heated through. Add threequarters of the basil leaves and stir to combine.

  • Step 5

    Heat the vegie rice following packet directions. Divide among serving bowls. Top with the pork stir-fry. Sprinkle with the remaining basil leaves and extra chilli, if using, to serve.

Tip! Vegie rice is a great no-waste convenience food – no peeling and trimming required! If you make your own vegie rice, you can reduce waste even further by using the whole veg, stems and all!
