Gingerbread ice-cream sandwich

Recipe may contain gluten, peanuts, tree nuts, milk and soy.

Joy to the world, this sweet ice-cream sandwich has come! Get the kids involved making these sweet icy treats. They can even decorate the gingerbread, too.

3 Ingredients

  • 2L vanilla ice-cream, slightly softened

  • Gingerbread biscuit dough (use your favourite recipe or see note)

  • Bought caramel sauce, to drizzle

3 Method Steps

  • Step 1

    Place ice-cream in a 21 x 31cm Swiss roll pan. Smooth the surface. Place in the freezer for 4 hours or overnight until firm.

  • Step 2

    Use a 12cm-high gingerbread man cutter to cut 8 shapes from gingerbread dough (use your favourite recipe or see note). Bake according to instructions then set aside to cool completely.

  • Step 3

    Use the same cutter to cut out 4 shapes from ice-cream. Sandwich each ice-cream shape between 2 biscuits. Drizzle over caramel sauce.
