Gaytime apple crumble

We hid two whole Golden Gaytime ice-creams in the crumbly topping of this Aussie apple dessert.Then we used another two to make a delicious custard to pour over the top.


9 Ingredients


  • 4 apples, peeled, cored, quartered, thinly sliced

  • 55g (1/4 cup) caster sugar

  • 1/2 lemon, juiced

  • 150g (1 cup) plain flour

  • 70g (1/3 cup, firmly packed) brown sugar

  • 50g (1/2 cup) rolled oats

  • 2 tbsp Saunders’ Malt Extract powder

  • 70g chilled butter, chopped

  • 4 Streets Golden Gaytime ice-cream bars

6 Method Steps


  • Step 1

    Preheat oven to 200C/180C fan forced.

  • Step 2

    Thinly slice the apple
    (4 apples, peeled, cored, quartered, thinly sliced)
    and place in a 2L (8 cup) baking dish. Scatter over the caster sugar
    (55g (1/4 cup) caster sugar)
    . Pour over the lemon
    (1/2 lemon, juiced)
    juice. Toss until combined.

  • Step 3

    Place the flour
    (150g (1 cup) plain flour)
    , brown sugar
    (70g (1/3 cup, firmly packed) brown sugar)
    , oats
    (50g (1/2 cup) rolled oats)
    and malt
    (2 tbsp Saunders’ Malt Extract powder)
    in a bowl and stir until combined. Use your fingertips to rub the butter
    (70g chilled butter, chopped)
    into the flour mixture until mixture resembles coarse crumbs. Remove and discard the packet and sticks from 2 of the ice-cream bars
    (4 Streets Golden Gaytime ice-cream bars)
    . Use your fingertips to rub the ice-cream into the flour mixture.

  • Step 4

    Spoon the flour mixture over the apple mixture. Bake for 25-30 minutes or until the apple is tender and the top is golden.

  • Step 5

    Place the remaining ice-creams, in their packets, in a large jug. Cover with boiling water. Set aside for 1 minute or until softened. Use your fingertips to massage the ice-cream until melted and well combined.

  • Step 6

    Divide crumble among serving bowls. Snip off the top off the ice-cream packets then pour the melted ice-cream over the crumble (discard sticks). Serve.
