This refreshing cocktail can be made with any frozen fruit you have in your freezer – simply add fruit, lime, rum, sugar syrup and ice to your blender and enjoy this smooth, spiked slushie!
55g (1/4 cup) caster sugar
300g frozen strawberries, chopped
100ml white rum
60ml (1/4 cup) fresh lime juice
Fresh blueberries and edible flowers, to decorate
2 Method Steps
Step 1Place the sugar(55g (1/4 cup) caster sugar) and 60ml (1 ⁄4 cup) water in a saucepan over medium heat. Cook, stirring, until the sugar dissolves. Increase heat to medium‑high and bring to the boil. Cook for 5 minutes or until it thickens slightly. Pour into a heatproof jug. Place in the fridge for 1 hour to chill.

Step 2Place the strawberries (300g frozen strawberries, chopped) and 2 tablespoonfuls of the sugar syrup in a blender. Blend until combined. Add the rum (100ml white rum) and juice (60ml (1/4 cup) fresh lime juice). Blend until smooth. Divide between 2 serving glasses. Thread a few blueberries onto 2 cocktail skewers. Arrange on top of the cocktails with edible (Fresh blueberries and edible flowers, to decorate) flflowers to serve.
