(2 x 290g packets white chocolate melts, melted) into a piping bag and use scissors to snip off a small piece at the tip of the bag. Pipe rounds (about the size of a 10 cent piece) onto the paper, tapping the tray firmly on the bench to flatten. Quickly sprinkle with hundreds (Hundreds & thousands, to sprinkle) & thousands. You will need about 43 freckles. Set aside to set.

  • Step 2

Add more chocolate to the bag, re-melting if necessary. Pipe squiggles onto 12 of the savoiardi (400g packet savoiardi (sponge finger biscuits)), top-side up, and working quickly, sprinkle with hundreds (2 x hundreds & thousands biscuits) & thousands. Set aside to set. Trim both ends from 2 of the remaining savoiardi at an angle to form the front and back gables of the house. Decorate with chocolate squiggles and hundreds & thousands. Set aside to set.

  • Step 3

Using the picture as a guide, stack 3 un-iced biscuits on their sides, securing with chocolate, to form one side of the house. Repeat the process with 9 of the remaining un-iced biscuits to form the other side, back and front of the house. Secure the trimmed biscuits to the front and back. Use a little chocolate to secure the house to a board or plate.

  • Step 4

For the roof, use the biscuits with the squiggles, trimming so as to meet at the top and secure with chocolate. Use the chocolate to secure the chocolate freckles onto the roof of the house.

  • Step 5

Cut one hundreds & thousands biscuit in half. Decorate biscuits with chocolate. Secure cut biscuits to side of house to form windows. Secure uncut biscuit to front of house to form a door. Decorate front of the house with jubes (3 jubes, halved) and mini M&Ms (6 mini M&Ms). Place a line of the mini marshmallows (10 mini white marshmallows) along the top of the roof. Cut a chimney from the remaining savoiardi and secure with chocolate, adding white marshmallow to form ‘smoke’.

  • Step 6

Add icicle drips to the bottom of the roof with any remaining chocolate. Dust with icing sugar (Icing sugar, to dust). Add 3 freckles as stepping stones.
