(2 sheets frozen butter puff pastry, just thawed) in half and stack the halves to make a double layer. Place over base of a sausage roll maker (leave flat) and close the lid. Turn on the sausage roll maker and cook for 12 minutes or until golden. Lift out onto a wire rack to cool, and repeat with remaining pastry sheet.

  • Step 2

Meanwhile, place cream (300ml thickened cream) and milk (250ml (1 cup) milk) in a large bowl and sprinkle with the pudding mix (100g packet vanilla instant pudding mix). Using electric beaters, beat for 2 minutes (it may look grainy). Cover and place in the fridge for at least 20 minutes.

  • Step 3

Use kitchen scissors to separate and trim pastry into sections. Using a small sharp knife and starting at a short end, carefully split pastry into top and bottom pieces.

  • Step 4

Stir vanilla pudding mixture until smooth then transfer to a piping bag fitted with a fluted nozzle. Pipe over half the pastry pieces. Add pastry tops. Dust with icing sugar (Icing sugar, to dust). Serve with strawberries (Strawberries, halved, to serve (optional)), if you like.
