Easy coconut flour banana bread

This easy banana bread recipe uses coconut flour so it’s gluten-free but tastes exactly like your childhood version.

8 Ingredients


  • 3 eggs

  • 100mls maple syrup

  • 125ml (1/2 cup) vegetable oil

  • 1 tsp vanilla extract

  • 1 1/2 cups (3 medium) over-ripe bananas, mashed

  • 1 1/2 cups coconut flour

  • 1 tsp bicarbonate of soda

  • 1 1/2 tsp baking powder (see note)

4 Method Steps


  • Step 1

    Preheat oven to 180C/160C fan-forced. Grease and line the base and sides of a 7.5cm-deep, 8.5 x 22.5cm (base measurement) loaf pan with baking paper.

    Whisk the eggs

    (3 eggs), syrup (100mls maple syrup) and oil (125ml (1/2 cup) vegetable oil) together in a medium bowl until combined. Add the vanilla (1 tsp vanilla extract) and banana (1 1/2 cups (3 medium) over-ripe bananas, mashed) and stir to combine.


  • Step 3

    Combine the flour (1 1/2 cups coconut flour), bicarbonate of soda (1 tsp bicarbonate of soda) and baking powder (1 1/2 tsp baking powder (see note)) in a large bowl. Make a well in the centre. Add the banana mixture and stir to combine. Spread mixture into prepared pan. Smooth top.

  • Step 4

    Bake for 40 to 45 minutes or until a skewer inserted in the centre comes out clean. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
