Crispy garlic caramelised chicken thighs

This simple chicken dinner packs a lot of flavour – garlic, herbs plus the sweetness of treacle. It’s also a one-tray wonder and is prepped in five minutes. Sold, yet?

8 Ingredients

  • 60g butter, softened

  • 6 cloves garlic, crushed

  • 3/4 cup firmly packed brown sugar

  • 2 tbsp treacle

  • 1 tsp salt

  • 1/2 tbsp fresh rosemary leaves

  • 1/2 tbsp fresh thyme leaves

  • 8 chicken thigh fillets, bone in, skin on

3 Method Steps

  • Step 1

    Preheat oven to 190C/170C fan forced. Line a large roasting pan with baking paper.

    Combine butter

    (60g butter, softened), garlic (6 cloves garlic, crushed), sugar (3/4 cup firmly packed brown sugar), treacle (2 tbsp treacle), salt (1 tsp salt) and herbs (1/2 tbsp fresh rosemary leaves|1/2 tbsp fresh thyme leaves) in a bowl. Divide into 8 portions.

  • Step 3

    Spread a portion over each chicken thigh (8 chicken thigh fillets, bone in, skin on) and place in prepared pan. Bake, basting halfway through, if desired, for 40-45 minutes or until juicy and tender. Set aside for 5-10 minutes. Serve (see recipe notes).
