This simple chicken dinner packs a lot of flavour – garlic, herbs plus the sweetness of treacle. It’s also a one-tray wonder and is prepped in five minutes. Sold, yet?
60g butter, softened
6 cloves garlic, crushed
3/4 cup firmly packed brown sugar
2 tbsp treacle
1 tsp salt
1/2 tbsp fresh rosemary leaves
1/2 tbsp fresh thyme leaves
8 chicken thigh fillets, bone in, skin on
3 Method Steps
Step 1Preheat oven to 190C/170C fan forced. Line a large roasting pan with baking paper.
Step 2Combine butter(60g butter, softened), garlic (6 cloves garlic, crushed), sugar (3/4 cup firmly packed brown sugar), treacle (2 tbsp treacle), salt (1 tsp salt) and herbs (1/2 tbsp fresh rosemary leaves|1/2 tbsp fresh thyme leaves) in a bowl. Divide into 8 portions.

Step 3Spread a portion over each chicken thigh (8 chicken thigh fillets, bone in, skin on) and place in prepared pan. Bake, basting halfway through, if desired, for 40-45 minutes or until juicy and tender. Set aside for 5-10 minutes. Serve (see recipe notes).
Serve chicken with rice or a side salad, if desired.
