Crispiest sweetcorn fritters

How did we make these easy corn vegetarian fritters super crispy? Lots of cheese, that’s how!

11 Ingredients


  • 420g can corn kernels, drained, rinsed

  • 4g pkt lightly dried chives

  • 200g haloumi cheese, grated

  • 200g cheddar cheese, grated

  • 1 cup plain flour

  • 1 tsp all-purpose seasoning

  • 3/4 cup milk

  • Rice bran oil, for shallow frying

  • Sea salt, to serve

  • Chopped tomato, to serve

  • Chopped avocado, to serve

  • Step 1

    Combine corn

    (420g can corn kernels, drained, rinsed), chives (4g pkt lightly dried chives), 100g haloumi, 100g cheddar, flour (1 cup plain flour) and seasoning (1 tsp all-purpose seasoning) in a bowl. Add milk (3/4 cup milk) and stir to combine. Combine remaining 100g haloumi and 100g cheddar together in a separate bowl.


  • Step 2

    Heat enough oil (Rice bran oil, for shallow frying) to come up 1cm on the side of a large frying pan over a medium high heat. Spoon 1/4 cup batter into the pan and cook for 2 minutes or until golden underneath.

  • Step 3

    Sprinkle a little of the cheese mixture on each fritter, turn and cook for a further 2 minutes or until cooked through and the cheese is golden. Transfer to a plate and cover to keep warm. Repeat with remaining batter and cheese.

  • Step 4

    Sprinkle fritters with sea salt (Sea salt, to serve) and serve with tomato (Chopped tomato, to serve) and avocado (Chopped avocado, to serve).
