Creamy lemonade mousse

This extra lemony mousse is so easy to whip up with just three ingredients – lemon, condensed milk and cream. Allow for some chilling time and you will have a creamy dessert fit for a dinner party or a simple midweek treat.

4 Ingredients


  • 2 x 395g can sweetened condensed milk

  • 3 large lemons, rind finely grated, juiced (see note)

  • 300ml carton thickened cream, whipped to firm peaks

  • Eskal Wafers Lemon biscuits, to serve (optional)

3 Method Steps


  • Step 1

    Place condensed milk
    (2 x 395g can sweetened condensed milk)
    , lemon
    (3 large lemons, rind finely grated, juiced (see note))
    juice and 2 tbsp rind in a large bowl. Stir until combined. Use a spatula to fold the cream
    (300ml carton thickened cream, whipped to firm peaks)
    into the condensed milk mixture until just combined.

  • Step 2

    Spoon mixture among 8 small serving glasses. Place in the fridge for 4 hours or until set.

  • Step 3

    Sprinkle with remaining rind. Serve with lemon wafers
    (Eskal Wafers Lemon biscuits, to serve (optional))

Recipe Notes

You will need 2 1/2 tablespoons finely grated lemon rind and 160ml (2/3 cup) fresh lemon juice.
