Chow mein sharing salad


Recipe may contain gluten, peanuts, tree nuts, milk and fish.

Inspired by chow mein and perfect for entertaining, this easy no-cook chicken salad is on the table in just 20 minutes.

13 Ingredients

  • 3 cups sliced cold cooked chicken

  • 1/4 wombok (Chinese cabbage), shredded

  • 1 carrot, cut into thin matchsticks

  • 2 green onions, thinly sliced

  • 100g packet crunchy fried noodles

  • Extra sliced green onion, to serve
  • Dressing

  • 1 tbsp soy sauce

  • 2 tbsp oyster sauce

  • 2 tsp brown sugar

  • 1/4 cup vinegar

  • 1 tsp sesame oil

  • 1 clove garlic, crushed

  • 1 tsp grated fresh ginger

3 Method Steps

  • Step 1

    Make Dressing: Combine soy sauce, oyster sauce, sugar, vinegar, sesame oil, garlic and ginger in a screw-top jar. Season with salt and pepper. Secure lid. Shake well to combine.

  • Step 2

    Place chicken in a large bowl. Drizzle with half of the dressing. Toss to combine. Stand for 5 minutes.

  • Step 3

    Add wombok, carrot, onion and noodles to chicken. Toss to combine. Transfer to a serving platter. Sprinkle with extra onion. Serve immediately with remaining dressing.
