Chicken Waldorf salad wraps

Just like the retro salad, these healthy wraps are packed with creamy chicken and lots of fresh veg. Almonds give the filling extra crunch, while apple adds sweet balance. They’re quick, easy, low-cal and low-fat.

  • 50g (1 cup) kale slaw

  • 1/4 apple, peeled, cut into matchsticks

  • 2 tsp finely chopped roasted unsalted almonds

  • 2 tbsp natural yoghurt

  • 1 tsp fresh lemon juice

  • 1 (about 45g) wholegrain wrap

  • 50g cooked chicken breast (or skinless rotisserie chicken), shredded

  • Step 1

    Combine the kale slaw

    (50g (1 cup) kale slaw) (reserve dressing from the packet for another use), apple (1/4 apple, peeled, cut into matchsticks) and almonds (2 tsp finely chopped roasted unsalted almonds) in a bowl. Combine the yoghurt (2 tbsp natural yoghurt) and lemon juice (1 tsp fresh lemon juice) in a separate bowl.


  • Step 2

    Top the wrap (1 (about 45g) wholegrain wrap) with the chicken (50g cooked chicken breast (or skinless rotisserie chicken), shredded), yoghurt mixture and slaw mixture. Roll up to enclose filling.
