Cheesy tortillas


Recipe may contain gluten, peanuts, tree nuts, milk and soy.

These easy tortilla wraps covered with cheese are perfect as a quick snack by themselves. Alternatively, you can top them with any Mexican meat, protein, seafood or veg filling of your choice and fold in half to serve like a taco. They can be made in your sandwich press on the ‘melt’ setting or in a frying pan (see notes).

4 Ingredients

  • 1 tbsp Mexican seasoning

  • 40ml rice bran oil

  • 10 mini flour tortillas

  • 250g Mexican or 3-cheese blend

  • Step 1

    Combine Mexican seasoning

    (1 tbsp Mexican seasoning) and oil (40ml rice bran oil) in a small bowl or jug.

  • Step 2

    Heat a large frying pan over a medium-high heat. Brush both sides of 1 tortilla with oil mixture. Add to pan and cook for 1 minute. Turn. Top tortilla with a little cheese. Cover with lid and cook for 1 minute or until cheese is melted. Repeat with remaining oil mixture, tortillas and cheese (250g Mexican or 3-cheese blend).

Recipe Notes

To make these in a sandwich press:

Preheat sandwich press. Brush 1 side of 2 to 3 tortillas with oil mixture. Place, oil-side down, in sandwich press. Brush top with more oil. Top with a little cheese. Set top plate to melt and cook for 1 to 2 minutes or until cheese is melted and tortilla is crisp and golden. Repeat with remaining oil mixture, tortillas and cheese.
