Cheat’s strawberry creme brûlée


Recipe may contain peanuts, tree nuts, milk, soy and sesame.

These cheat’s desserts are made with bought double thick custard, so they’re on the table in less than 20 minutes.

  • 900g tub double thick vanilla custard

  • 125g strawberries, hulled, thinly sliced

  • 155g (3/4 cup) caster sugar

  • 2 tsp finely chopped pistachios

    (900g tub double thick vanilla custard) among four 1 cup (250ml) capacity heatproof dishes. Top with strawberries (125g strawberries, hulled, thinly sliced).

  • Step 2

    Place the sugar (155g (3/4 cup) caster sugar) and 2 tbsp of water in a small saucepan over medium heat. Cook, without stirring, for 1-2 minutes or until sugar has dissolved. Cook for 7-8 minutes or until dark golden. Remove from the heat and allow bubbles to subside.

  • Step 3

    Carefully spoon the toffee over the strawberries. Sprinkle with pistachios (2 tsp finely chopped pistachios). Set aside for 5 minutes to cool slightly before serving.
