Char siu pineapple and pork skewers

Ready in 20 minutes, this easy dinner screams ‘summer barbecue’ and is only $6.10 a serve.

8 Ingredients

  • 500g pork fillet

  • 1 large red capsicum

  • 1 large red onion

  • 400g pre-chopped fresh pineapple chunks

  • 80ml (1/3 cup) char siu sauce

  • 450g packet microwave white rice

  • 1 bunch fresh coriander

  • 1 tbsp sesame seeds, toasted

  • Step 1

    Cut the pork

    (500g pork fillet) and capsicum (1 large red capsicum) into 2cm pieces. Cut the onion (1 large red onion) into 2-3cm pieces. (You need 24 pieces of each ingredient).

  • Step 2

    Thread a piece of capsicum, onion, pineapple (400g pre-chopped fresh pineapple chunks) and pork onto a metal or presoaked bamboo skewer. Repeat threading 1 more time on same skewer. Repeat to make 12 skewers in total. Place the skewers on a large baking tray. Brush with some of the char siu sauce (80ml (1/3 cup) char siu sauce).

  • Step 3

    Heat a chargrill pan over medium-high heat. Heat the rice (450g packet microwave white rice) in the microwave following packet directions.

  • Step 4

    Once the pan is hot, cook the skewers, turning occasionally and brushing with remaining sauce, for 10 minutes or until the pork is just cooked through.

  • Step 5

    Coarsely chop the coriander (1 bunch fresh coriander) leaves and stems. Toss through rice. Divide among serving plates. Top with skewers and sesame seeds (1 tbsp sesame seeds, toasted).
