Melting moments biscuits that truly live up to their name but with an added burst of that decadent Caramilk flavour inside the filling. For even more Caramilk goodness, drizzle with melted chocolate before serving.
185g butter, softened
1/3 cup caster sugar
1 cup plain flour
1/4 cup cornflour
1/2 cup custard powder
80g Caramilk chocolate, melted and cooled, to serve
150g (1 cup) icing sugar mixture
100g Caramilk chocolate, melted and cooled
6 Method Steps
Step 1Preheat oven to 190C/170C fan forced.
Step 2Place butter(185g butter, softened) and sugar (1/3 cup caster sugar) in the bowl of a stand mixer fitted with the paddle attachment. Beat, scraping down the sides occasionally, for 5 minutes or until pale and creamy. Add flours (1 cup plain flour|1/4 cup cornflour) and custard powder (1/2 cup custard powder) and beat until combined. Turn onto a lightly floured surface. Knead, gently, until smooth. Divide into 36 pieces. Gently roll each piece into a ball. Place on a lightly floured baking tray and gently press with a fork to flatten.

Step 3Bake for 15-17 minutes or until just starting to turn golden. Transfer to a wire rack to cool completely.
Step 4To make the filling, place butter (125g butter) in a clean stand mixer bowl fitted with the paddle attachment. Beat until pale and creamy, add the icing sugar (150g (1 cup) icing sugar mixture) and beat until combined. Gradually add melted Caramilk chocolate (100g Caramilk chocolate, melted and cooled) and beat until well combined. Transfer to a piping bag fitted with a 7mm plain nozzle.
Step 5Pipe filling onto half of the biscuits. Top filling with another biscuit.
Step 6Drizzle with melted Caramilk chocolate to serve.
