This fruity slice makes a quick and easy summertime dessert.
70g (1/3 cup) brown sugar
60ml (1/4 cup) fresh lime juice
8 x 1cm-thick slices fresh pineapple flesh
Gluten-free vanilla ice-cream, to serve
1 1/2 tbsp shredded coconut
Finely grated lime rind, to sprinkle
3 Method Steps
Step 1Place the sugar(70g (1/3 cup) brown sugar), butter (50g butter) and lime juice (60ml (1/4 cup) fresh lime juice) in a large frying pan and stir over low heat until combined. Simmer, stirring occasionally, for 3 minutes or until slightly reduced.

Step 2Increase heat to medium-high and add half the pineapple slices (8 x 1cm-thick slices fresh pineapple flesh). Cook for 3 minutes each side. Transfer to serving plates and repeat with the remaining pineapple.
Step 3Top the pineapple with ice-cream (Gluten-free vanilla ice-cream, to serve). Drizzle over the sauce from the pan and sprinkle with coconut (1 1/2 tbsp shredded coconut) and lime (Finely grated lime rind, to sprinkle) zest. Serve immediately.
