Baked Baileys tart


Recipe may contain gluten, milk, soy, sesame and egg.

It’s no secret that Baileys Irish Cream goes perfectly in desserts and we’ve just proven it again with this sweet tart. The smooth taste of Baileys is baked into a creamy custard – simple but impressive. To save time, you can use store-bought shortcrust pastry.

10 Ingredients

  • 4 eggs

  • 110g (1/2 cup) caster sugar

  • 300ml thickened cream

  • 125ml (1/2 cup) milk

  • 80ml (1/3 cup) Baileys Irish Cream liqueur
  • Pastry

  • 225g (1 1/2 cups) plain flour

  • 2 tbsp icing sugar

  • 125g unsalted butter, chilled, chopped

  • 1 egg yolk

  • 2 tbsp water, chilled

  • Step 1

    For the pastry, place the flour

    (225g (1 1/2 cups) plain flour), icing sugar (2 tbsp icing sugar) and butter (125g unsalted butter, chilled, chopped) in a food processor. Process until mixture resembles fine breadcrumbs. Add the egg yolk and water (2 tbsp water, chilled). Process until dough comes together. Turn out onto a lightly floured surface. Knead until just smooth. Shape into a disc. Wrap in plastic wrap. Place in the fridge for 30 minutes to rest.

  • Step 2

    Preheat oven to 200C/180C fan-forced. Grease a 4cm-deep, 23.5cm (base measurement) round, loose-based fluted flan pan. Roll out pastry between 2 sheets of baking paper until 3mm thick. Line pan with pastry and trim excess. Place in the fridge for 15 minutes.

  • Step 3

    Place the prepared pan on a baking tray. Line the pastry case with baking paper and fill with ceramic pie weights or uncooked rice. Bake for 10 minutes. Remove weights or rice and baking paper. Bake for a further 10 minutes or until light golden. Cool pastry case. Reduce oven temperature to 180C/160C fan-forced.

  • Step 4

    Whisk the eggs (4 eggs), sugar (110g (1/2 cup) caster sugar), cream (300ml thickened cream), milk (125ml (1/2 cup) milk) and Baileys (80ml (1/3 cup) Baileys Irish Cream liqueur) in a bowl. Pour mixture into pastry case. Bake for 30 to 35 minutes or until filling is just set. Cool for 15 minutes. Place in the fridge overnight or until chilled completely.

  • Step 5

    Cut tart into wedges to serve.
