Baileys coffee fruit cake

Impress everyone this Christmas using the easiest fruit cake recipe in the world. All you need are four ingredients! The addition of Baileys is an extra treat, especially at Christmas time.

4 Ingredients

  • 1kg (5 1/2 cups) mixed dried fruit

  • 500ml (2 cups) iced coffee flavoured milk

  • 125ml (1/2 cup) Baileys Irish Cream liqueur

  • 300g (2 cups) self-raising flour

4 Method Steps

  • Step 1

    Combine the dried fruit

    (1kg (5 1/2 cups) mixed dried fruit), iced coffee flavoured milk (500ml (2 cups) iced coffee flavoured milk) and Baileys (125ml (1/2 cup) Baileys Irish Cream liqueur) in a large bowl. Stir to combine. Cover and place in the fridge overnight to soak.

  • Step 2

    Remove the fruit mixture from the fridge and set aside for 30 minutes to come to room temperature.

  • Step 3

    Meanwhile, preheat the oven to 180C/160C fan forced. Grease a 20cm square cake pan. Line base and sides with baking paper.

  • Step 4

    Add the flour (300g (2 cups) self-raising flour) to the fruit mixture. Stir to combine. Pour into the prepared pan and smooth the surface. Bake for 1 hour 45 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.

Recipe Notes

For an extra Baileys hit, brush the warm cake with a little more Baileys before allowing to cool completely.
