Bacon lattice potato bake

Everyone’s favourite creamy potato dish but with a pretty bacon lattice weave. We think it would make a stunning Christmas side. Allow the bake to cool before adding the bacon.

6 Ingredients

  • 1 garlic clove, smashed

  • 1.2kg white-skinned potatoes, peeled, thinly sliced

  • 300ml cream for cooking

  • 125ml (1/2 cup) milk

  • 150g swiss-style cheese slices

  • 2 x 200g packets streaky bacon

4 Method Steps

  • Step 1

    Preheat oven to 180C/160C fan forced. Lightly grease a 1.5L (6-cup) baking dish with butter. Rub the garlic

    (1 garlic clove, smashed) over the base and side of the dish.

  • Step 2

    Combine the cream (300ml cream for cooking) and milk (125ml (1/2 cup) milk) in a jug. Season.

  • Step 3

    Layer one-quarter of the potato (1.2kg white-skinned potatoes, peeled, thinly sliced) over the base of the dish, overlapping slightly. Drizzle over one-quarter of the cream mixture. Repeat layering with the remaining potato and cream mixture. Sprinkle with the cheese (150g swiss-style cheese slices). Cover with non-stick baking paper and foil and bake for 1 hour or until the potato is tender. Set aside to cool.

  • Step 4

    Meanwhile, cut three 3cm-wide strips of bacon (2 x 200g packets streaky bacon) lengthways from each rasher. Arrange bacon strips in a lattice pattern over the potato. Bake for a further 20 minutes or until the bacon is golden. Set aside for 15 minutes to rest.
